New Recipe!

Jalapeno Breakfast Sandwiches

We woke up on a Sunday morning and felt like making something different, so we developed this recipe out of the blue with the ingredients found in the fridge. We had some leftover ham from the previous evening, so it was very quick and easy to make.

Ingredients

  • 8 jalapeno slices (we used pickled jalapenos for this recipe)
  • 4 hardboiled eggs
  • 8 ounces ham
  • 4 ounces Monterrey Jack cheese
  • 16 slices of mini rye bread

Cooking Directions

  1. Toast the rye breads. Set 8 pieces over 2 plates.
  2. Slice the eggs in half lengthwise.
  3. Stack each piece of rye bread with 1 ounce of ham, 1/2 ounce cheese, 1/2 egg slice, and top with 1 jalapeno slice.
  4. Serve with the other slices of rye bread on the side for topping the sandwich. Makes 8 mini sandwiches

NOTE: If you'd like, you can nuke the sandwiches for about 1 minutes to heat and melt the cheese a bit. Enjoy!
