Mojo Marinated Halibut with Roasted Asparagus
While there are different variations of the Mojo sauce or marinade around the world, I am partial to the Cuban version that incorporates orange juice. The citrus addition works its way into the items you are marinating and imbues them with distinctive flavor. A typical Cuban Mojo uses milder peppers, like the jalapeno pepper, but I’ve incorporated some white bhut jolokia peppers into this variation for some additional spice.
National Wing Day 2013
Even if you missed the date, there are still plenty of reasons to make wings. July 29th is National Wing Day! We love chicken wings at Chili Pepper Madness – hot and spicy wings, drenched in delicious sauce, Buffalo style, certainly extra spicy for our tastes, but we also like them sometimes tangy and sweet, and sometimes with the flavors of barbecue, or maybe an Asian flair…OK, forget this. We just love wings!
Spicy Chicken Saltimbocca Recipe
I was watching “The Next Food Network Star” competition recently and one of the contestants, Stacey Poon-Kinney, served up a dish I hadn’t seen in ages. It is called Chicken Saltimbocca. Saltimbocca literally means “jumps in the mouth” in Italian, which should tell you enough about this dish. And yes, it is true. Stacey served hers over angel hair pasta with a brown butter sauce, which sounds amazing, but we have our own version made with roasted red jalapeno peppers. The chicken stays tender and moist wrapped in the proscuitto.
Spicy Grilled Cauliflower Recipe
We got our grill on this weekend with burgers and shrimp, but that’s not all. We like to grill up our veggies as well. One of the best vegetables to serve up from the barbecue is none other than cauliflower. I’m sure you’ve cooked with cauliflower dozens of times, and while there are numerous ways to transform cauliflower and incorporate it into various dishes, I personally enjoy it close to its original form, and that means a simple preparation.

Sorry if you missed it, but keep this in mind for next year. Why? RIBS!!! – July 11 – 14th, 2013. We have gone for the past several years and always enjoy the selection of ribs, especially those with the secret HOT BBQ sauce usually hidden in the back. I typically have to ask for it. They’ll sneak out the ghost pepper BBQ sauce for me and YEAH!
