Interesting Jalapenos in the News
Jalapeno Madness Interview - Jalapenos and Salmonella
Jalapeno Madness was recently queried for a news article by the San Jose Mercury News about the recent jalapeno salmonella scare, and here is what we said...
"Yes, it is a sad day for jalapenos! As much as I'd love to defend the world's greatest chili pepper, I think safety is most important above all. I'd like to remind people to keep good, clean habits in the kitchen, especially with jalapeno peppers. Thoroughly wash your jalapenos before cooking with them. In fact, double wash them, and keep your kitchen very clean. It might be a good idea to cook your jalapenos thoroughly into your food rather than adding them afterwards. I often like to spread fresh jalapenos as a garnish or seasoning, but you can always cook the peppers into your recipes, which will kill the bacteria, yet will retain the delicious jalapeno flavor and heat.
This applies specifically to recent store bought peppers, but also to peppers grown at home. While your home grown peppers might not be so risky, you should still practice good cleaning habits.
Lastly, if you're worried about fresh jalapeno peppers right now, try using pickled or preserved jalapeno peppers from the store. There are some good varieties out there. Some don't like the pickled flavor as much as a nice fresh jalapeno, but it can work in a pinch."
We hope you'll be careful with jalapeno peppers until the scare is over. Check out the article here.

New Recipe!

Jalapeno Pepper and Pepperoni Pizza Pasta
This recipe was inspired by one of our favorite pizzas down at Nick's Pizza Pub - Jalapeno, Pepperoni and Pineapple. I've incorporated it into a pasta meal, and it is now one of Jalapeno Miss' favorite dishes.
Ingredients
-
-
1 tomato
-
8-10 pepperoni slices
-
8 ounces spaghetti noodles
-
1 cup pineapple, sliced
-
1 cup shredded Monterray Jack cheese
-
1/2 cup feta cheese
-
2 tablespoons minced garlic
-
1/2 cup Olive Oil
-
6-8 leaves of fresh basil, washed
Directions
-
Dice up the jalapeno peppers, tomato, pepperonis, and basil.
-
In a deep bowl, heat up the jalapeno peppers, pepperoni, basil, tomato, pineapple, garlic and a splash of oil. The pineapple will be quite moist, so you can bring that to a boil and reduce if preferred, but it is not necessary.
-
Boil the pasta as directed and preferred, then transfer to a large serving bowl. Mix in your jalapeno/pineapple/pepperoni sauce mixture and toss with the remaining olive oil.
- Sprinkle with feta and Monterray Jack cheeses, and serve!

I'll post them on the web site.
