Happy New Year, everyone! We’re ringing in 2014 with an ode to the site that started it all for us – Jalapeno Madness. I started Jalapeno Madness as a way to learn about building web sites, so it was only natural for me to experiment with something I absolutely love – jalapeno peppers. I began by posting some of my early jalapeno pepper recipes online, which were admittedly not that great, but still flavorful and fun.

Cooking with the Queen Laurie Chili Pepper

I recently received a batch of Queen Laurie chili peppers and had to dig in. The Queen Laurie is a fruity Peruvian pepper. When ripe it is a bright orange, bright and inviting. The flavor is sweet and the heat is a bit hotter than a jalapeno pepper, though the heat can vary from pepper to pepper.

Spicy Chilean Sea Bass

This year for our annual New Year’s Eve gathering, we’re serving up several dishes with the star being a stuffed filet mignon. I thought we should also serve a seafood dish and tossed around a few possibilities, but once I mentioned Chilean Sea Bass, it was a done deal. Seems it is everyone’s favorite delicacy.
