Homemade Macaroni and Cheese with Kramer's Wing Rub
I’d like to pay a compliment to Kramer’s Wing Rubs. I did a review of 3 of their spicy wing rubs, which we at Chili Pepper Madness greatly enjoyed. You can find the review here. I had noted in my review that the rubs have a strong smokiness, perhaps a bit too much for some consumers. I had tried the rubs on shrimp, fish, and vegetables. All were delicious, but last night, on a whim, Patty asked for macaroni and cheese. I don’t make anything out of a box but we were in a hurry. You see, Patty had Bunco and needed to hurry out to drink, I mean play Bunco, with the ladies.
Calivirgin Extra Virgin Olive Oil – with Jalapeno Peppers
On our recent trip to Italy, we visited several wineries that also produced olive oil. This was a wonderful surprise because, while we love wine, we love olive oil even more. Especially fresh olive oil. The process of making olive oil in Italy is interesting, with the locals pouring out at harvest time to help produce the oil, donating their time for olive oil in return. The extra virgin olive oil in Italy was so delicious, we brought as much home as we could carry.
Italian Inspired Grilling Recipes with Chili Peppers
We recently spent 3 weeks in the Mediterranean with an entire week in Italy alone, bopping back and forth between stops, visiting as many highlights as we could manage without succumbing to total exhaustion. There is so much to see, but more importantly, so much to eat! The Mediterranean region is well known for its wonderful food that focuses on fresh, available local ingredients, and the quality shows both on the plate and on the palate.
How Do You Know You Are a Chilihead?
We had a bit of fun on Facebook recently and thought we’d share. We made the following post and got some interesting answers:
“You Know You Are a Chilihead When______________?”
Growing Chili Peppers
It’s that time of year! We hope your chili pepper garden has been planted outside and are taking proper root. Pretty much no matter where you live in the US, you should have already started your chili peppers from seeds unless you’ll be buying seedlings for your garden. We are in the Chicago area (zone 5) and have our chili pepper plants transplanted. We’re growing about a dozen types again this year.
Spice Up Your Pan Sauces with Habanero Peppers
Pan sauces are a great way to add a ton of flavor to your meal. A pan sauce is a simple thing with complex flavor, as it utilizes the brown bits of meat and seasonings leftover at the bottom of the pan after you’ve sauteed your meal. Those little brown bits are jam packed with flavors and it is sad to see them go to waste. Incorporating a bit of habanero peppers into them will add an additional flavor element and will make the chilihead in you very happy.

Super Hot chili peppers are gaining popularity, and that makes us wonderfully happy at Chili Pepper Madness. We love all chili peppers, from the heatless Bell Pepper all the way up to the devastatingly hot Moruga Scorpion which currently tops the scale at more than 2 Million Scoville Heat Units.
