Aji Panca chili peppers are an excellent choice when seeking distinctive chili pepper flavor with a milder heat. The pepper measures in at only 500 Scoville Heat Units (SHU), which is enough for those with more sensitive palates. Jalapeno Poppers Turned into Pizzas – Recipes
While working in the kitchen recently to shoot a number of videos on how to make jalapeno poppers, we were left with a variety of leftover ingredients. We had jalapeno peppers of course, but also loads of different cheeses, garlic, chorizo, cooked shrimp, spices and more. Sitting there in the afterglow of eating all those poppers, Jalapeno Miss and I began to look forward to dinner time. We wanted something easy. After cooking all day in the kitchen, neither of us were looking forward to digging into an elaborate meal.
Romesco Sauce with Jamaican Red Mushroom Chili Peppers
During our Mediterranean trip, we visited Barcelona, Spain. It is such a gorgeous city filled with impressive culture, architecture, and especially food. One particular flavor we encountered has become a new favorite – Romesco Sauce. Romesco sauce is a multi-purpose sauce used on any number of dishes. It is a bit like a traditional pesto, but made with toasted almonds, chili peppers, tomato, red wine vinegar, olive oil, crusty bread and other seasonings.

Did you make chili this month? No? How sad! October is National Chili Month. Just as the weather is turning colder, our bellies begin to ache for the spicy warmth that is chili. One of the most wonderful things about chili is the variety.
National Pickled Peppers Week
With gardening season coming to a close for most here in the U.S., it is now appropriately “National Pickled Peppers Week”. Yes, it is time to start thinking about pickling those chili peppers so you can keep them all winter long. Pickling is a smart way to preserve your chili peppers as they can be cooked into a variety of meals, or simply spooned over the top of a dish as a finisher or flavor addition.
Cooking with Trinidad Pimiento Chili Pepper – Two Recipes
I received some mild but flavorful Trinidad Pimiento chili peppers from my good friend and chili pepper grower, Jim Duffy, and decided to cook them into a couple of different recipes. On the Menu – Pineapple-Chili Pepper Marinated Chicken Breasts and Corn on the Cob coated with Feta-Trinidad Pimiento Peppers.
