Bacon and Rice Jalapeno Poppers Recipe

Jalapeno poppers are extremely delicious and addicting, as you all know, but when you bring in the bacon...watch out! Cream cheese is a jalapeno popper recipe standard, and quite welcomed, but the brown rice brings in an additional texture and flavor that you will enjoy. Serve these poppers with a simple sauce, like a tart plum sauce or even a plum jam.

Ingredients

  • 10 jalapeno peppers
  • 6 slices bacon, cooked until crispy
  • 8 ounces cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup brown rice, cooked/prepared
  • 1/4 cup fresh cilantro, coarsely chopped
  • 1/2 teaspoon ground cumin

Cooking Directions

  1. Preheat oven to 400°.
  2. Slice jalapeno peppers in half lengthwise and core.
  3. Lightly oil a baking pan and set jalapeno peppers on top, skin sides down.
  4. Chop bacon and add to a mixing bowl. Add cream cheese, cheddar cheese, rice, cumin and cilantro. Mix well.
  5. Stuff each jalapeno half with the cheese-rice mixture.
  6. Bake 12-15 minutes, or until the stuffing is bubbly.
  7. Serve!
