Spicy Chicken, Peppers and Ham Rollups
This recipe is fairly simple to make and works great if you are watching your calories. The peppers bring in just enough kick to compliment the seasoned chicken. The ham keeps it all together, and you're free to serve it up with any sauce of your liking. We chose a simple hot sauce, but it would be great with a salsa or other dressing.
Ingredients
- 1 8 ounce chicken breast
- 2 large jalapeno peppers
- 2 large serrano peppers
- 2 cayenne peppers
- 4-6 large slices of deli ham
- seasonings to taste
Cooking Directions
- Preheat oven to 350 degrees
- Slice raw chicken breast into thin slices and peppers into spears
- Add to a mixing bowl and season to your preference (we love garlic, Cajun, Montreal chicken seasoning)
- On a baking sheet place ½ the slices of ham on top of each other
- Add ½ the chicken breast and ½ the peppers
- Roll the ham and secure with a toothpick
- Repeat for the other rollup
- Bake for 30 minutes or until chicken is cooked through
