Chipotle Steamed and Seared Lobster Tails
Chipotle peppers are delicious jalapeno peppers that have been smoked and dried, so they bring a wonderful flavor to steamed fish and shellfish. Double it up with a smoky chipotle rub and you've got a double bang of flavor. It's not very spicy, but full of rich flavor. We served ours with a bit of melted butter and seared asparagus, but skip the butter for low-calorie goodness.

Chipotle Steamed and Seared Lobster Tails
Ingredients
- 1 large 1 ¼ pound lobster tail, cut in half lengthwise
- 12 ounces Mexican style beer
- 1 tablespoon chipotle chili powder
- 4 chipotle peppers, chopped
- 1 teaspoon fresh garlic, chopped
- 2 tablespoons butter
- 1 teaspoon sea salt
- 1 teaspoon olive oil
- Salt and pepper to taste
Cooking Directions
- Rub each lobster tail half with olive oil and chipotle chili powder. Season with salt and pepper as desired. (NOTE: for even lower calories, skip the olive oil and use a spray oil)
- To a large steamer, add Mexican beer, garlic, chipotle peppers and sea salt.
- Add lobsters and cover tightly.
- Steam the lobsters over a high flame for about 12 minutes, or until lobster is cooked through, white and opaque.
- Heat a sauté pan to high heat and add butter.
- Remove lobsters from steamer and sear the meat side in butter about 1 minute.
- Serve!
