Deconstructed Shrimp-Goat Cheese-Jalapeno Poppers Pizza
After a long day of making jalapeno poppers, of which we are very fond, we were left with a number of leftover ingredients. Not wanting anything to go do waste, we took a good look at our ingredients pile and found we had the perfect collection for pizza! Talk about good news! All we had to do was whip up a simple flatbread, then pile on the preferred ingredients, though you can easily use Italian or French bread, or even a store bought crust. Here is one of the pizzas we enjoyed.
Ingredients
- 1 flat bread crust (see recipe below)
- 4 tablespoon cream cheese
- 1 teaspoon minced garlic
- Salt to taste
- ¼ cup goat cheese
- ½ cup cooked shrimp, chopped
- 1-2 jalapeno peppers, sliced
- 2-3 tablespoons olive oil
- ½ cup shredded Colby Jack/white cheddar mixture
- Dried basil to taste
Cooking Directions
- Preheat Oven to 425 degrees.
- In a mixing bowl, combine cream cheese, garlic and salt. Mix well.
- Top flat bread crust with spoonfuls of your cream cheese mixture and goat cheese.
- Top with shrimp and jalapeno pepper slices.
- Drizzle with olive oil then top with cheeses.
- Bake for 10 minutes, or until cheese is melted.
- Sprinkle with dried basil and serve!
Simple Flat Bread Recipe
- 2 cups flour
- 1/4 teaspoon baking soda
- 4 tablespoons melted butter
- pinch of salt
- 1/4 cup water + 1-2 tablespoons
Cooking Directions
- In a mixing bowl, combine flour, baking soda, salt, butter and water. Mix to form a dough. Knead about 5 minutes.
- Wrap in plastic wrap and refrigerate about 30 minutes.
- Separate dough into 2 portions and flatten with a rolling pin to about 1/4 inch thickness.
- Heat a large grilling pan to medium-high heat and cook each flat bread dough about 2-3 minutes, or until the dough hardens. Flip and cook another 2-3 minutes. The dough will form a cracker-like crust.
