Grilled Salmon Stuffed with Jalapeno Peppers and Parmesan Cheese
Get your summer grills ready with this Italian inspired recipe of grilled stuffed salmon. The key is slicing the salmon fillets properly to wrap around your stuffing mixture. The combination of Parmesan cheese, jalapeno peppers, pecans and basil is much like a pesto mixture, though the consistency is a bit different off the grill. Delicious.

Grilled Salmon Stuffed with Jalapeno Peppers and Parmesan Cheese
Ingredients
- 2 6-ounce salmon fillets, cut lengthwise from the salmon side
- 1/2 cup shredded Parmesan cheese
- 2 tablespoons olive oil
- 1/4 cup pecans, crumbled
- 1 jalapeno pepper, diced
- 6-8 large basil leaves, chopped
- Olive oil for drizzling
Cooking Directions
- Preheat grill to medium heat.
- In a mixing bowl, combine Parmesan cheese, olive oil pecans, jalapeno peppers and basil leaves. Mix well.
- Set salmon fillets on their side and divide the stuffing between the fillets. Wrap fillets around the stuffing and close with toothpicks. See photo for a reference.
- Grill about 8-10 minutes, or until salmon is cooked through.
- Drizzle with fresh olive oil and serve immediately while hot.
