Homemade Ziti and Cheese with Jalapeno Peppers
A recipe for creamy homemade macaroni and cheese with ziti noodles and plenty of pan roasted jalapeno peppers.

Ingredients
- 2 cups ziti noodles, cooked to preference
- 4 jalapeno peppers
- 2 ounces pancetta
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 3 ounces goat cheese
- 3 ounces shredded cheddar cheese (+ a bit more for topping)
- 1 teaspoon chili powder
- Pepper to taste
Cooking Directions
- Stem the jalapeno peppers and slice them lengthwise. Cook in a lightly oiled pan heated to medium about 5 minutes per side for a nice pan roast.
- While jalapenos are roasting, cook the pancetta in a small pan until it gets nice and crispy. Drain and set aside to cool.
- Heat a large pot to medium heat and add butter. Allow to melt.
- Add flour and stir to form a roux. Cook about 3 minutes to allow it to brown.
- Add milk and stir constantly to thicken.
- Add cheeses and continue to stir until cheeses are melted.
- Crumble in cooked pancetta, chili powder and pepper to taste. Stir.
- Distribute to serving bowls and top with additional chili powder, pepper, cheddar cheese and jalapeno peppers.
- Serve!
