Jalapeno-Avocado-Pineapple Vinaigrette

Got to playing with vinaigrettes to use as quick toppings for fish, and this was a huge winner. The avocado, pineapple, jalapeno pepper combination really come together nicely.

Jalapeno-Avocado-Pineapple Vinaigrette Recipe


  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • Juice from 1 lime
  • 1-2 jalapeno peppers, sliced into rings
  • 1 small avocado, peeled, pitted and diced
  • 1/4 cup fresh pineapple, diced
  • Dash of ground sea salt

Cooking Directions

  1. Combine all ingredients into a bowl.
  2. Let sit about 20 minutes to allow the peppers to slightly soften.
  3. Serve!
