Jalapeno-Avocado-Pineapple Vinaigrette
Got to playing with vinaigrettes to use as quick toppings for fish, and this was a huge winner. The avocado, pineapple, jalapeno pepper combination really come together nicely.

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- Juice from 1 lime
- 1-2 jalapeno peppers, sliced into rings
- 1 small avocado, peeled, pitted and diced
- 1/4 cup fresh pineapple, diced
- Dash of ground sea salt
Cooking Directions
- Combine all ingredients into a bowl.
- Let sit about 20 minutes to allow the peppers to slightly soften.
- Serve!
