Jalapeno Cheese and Egg Squares

These jalapeno cheese and egg squares make for a great appetizer. You can also bake them in small pie tins for a quiche flair. Be generous with your spices on this recipe. Have fun!

Ingredients

  • 4 jalapeno peppers, chopped
  • 1 cup evaporated milk
  • 3/4 cup water
  • 3 eggs, beaten
  • 2 cups shredded Cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup butter, melted
  • 1/4 cup chopped green onions
  • 1 teaspoon white pepper
  • salt to taste
  • Salsa optional

Cooking Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, mix the evaporated milk, water, eggs, Cheddar cheese, flour, baking powder, butter, green onions, seasonings, and jalapeno peppers.
  3. Spread mixture evenly into a greased baking dish.
  4. Bake 30 to 35 minutes or until lightly browned. Cool.
  5. Cut into 1 inch squares and serve! Top with salsa if desired. Yum!
