Jalapeno Cheese and Egg Squares
These jalapeno cheese and egg squares make for a great appetizer. You can also bake them in small pie tins for a quiche flair. Be generous with your spices on this recipe. Have fun!
Ingredients
- 4 jalapeno peppers, chopped
- 1 cup evaporated milk
- 3/4 cup water
- 3 eggs, beaten
- 2 cups shredded Cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup butter, melted
- 1/4 cup chopped green onions
- 1 teaspoon white pepper
- salt to taste
- Salsa optional
Cooking Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, mix the evaporated milk, water, eggs, Cheddar cheese, flour, baking powder, butter, green onions, seasonings, and jalapeno peppers.
- Spread mixture evenly into a greased baking dish.
- Bake 30 to 35 minutes or until lightly browned. Cool.
- Cut into 1 inch squares and serve! Top with salsa if desired. Yum!
