Spicy Jalapeno Breakfast Frittatas
The other morning we woke up and decided to make something simple for breakfast. But when you see this recipe, you'll see that it doesn't look simple at all. But guess what? It is! It's basically a breakfast casserole. Just whip it together and bake. Viola! It's very delicious, and a bit like a quiche.
Spicy Jalapeno Breakfast Frittatas
Ingredients
- 2 large jalapeño peppers, diced
- 1 medium sized potato
- 4 large eggs
- 1/2 cup cheddar cheese, shredded
- 4 ounces feta cheese, crumbled
- 3 ounces fresh spinach, chopped
Cooking Directions
- Cook the potato in a microwave until soft -- you'll be able to easily pierce it with a fork.
- Remove potato skin and add potato to a mixing bowl.
- To the bowl, add remaining ingredients and mix well.
- Spread over a lightly greased baking dish.
- Bake 20-25 minutes.
- Serve!
