Jalapeno and Goat Cheese Stuffed Chicken Breasts
Stuffing chicken is a time-honored way to infuse flavor into something that can quickly become routine. The key is to properly butterfly the chicken and pound it flat with a meat tenderizer, then roll the chicken around the stuffing. Here we used creamy goat cheese, roasted jalapeno peppers, apple and some seasonings for a highly flavorful combination.

Ingredients
- 2 chicken breasts, butterflied and pounded thin
- 1 roasted jalapeno pepper, chopped
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 ounces goat cheese
- 1 half apple, minced
- 1/4 cup chicken broth
- 1 tablespoon Creole seasoning
- Salt and pepper to taste
Cooking Directions
- Heat a pan to medium heat. Cook onion in a splash of olive oil for five minutes.
- Add garlic and cook for one more minute.
- Remove from heat and add to a mixing bowl.
- To the mixing bowl, add goat cheese, jalapeno pepper, apple and Creole seasoning. Salt and pepper to taste and mix well.
- Set your stuffing mix aside until ready to use.
- Preheat oven to 350.
- Season chicken breast with salt and pepper and lay them flat.
- Divide stuffing mixture between the chicken breasts and roll.
- Heat an oven ready pan to medium heat and lightly oil.
- Sear the stuffed chicken breasts about a minute per side to brown.
- Remove from heat. Add chicken broth to the chicken.
- Bake for 12 to 15 minutes or until chicken is cooked through.
- Spoon some of the broth from the pan over the chicken and serve.
