Kickin' Almond Carbonara with Jalapeno Peppers
We've altered our favorite carbonara sauce recipe for a healthy, fairly low-calorie tilapia meal. Tilapia is an often under rated fish, though perfect when properly seasoned. Spicy jalapeno peppers and the versatile almond are used for a tasty blast of flavor.

Kickin' Almond Carbonara with Jalapeno Peppers
Ingredients
- 2 jalapeno peppers, diced
- 1 cup ziti noodles
- 2 eggs, beaten
- 1 ounce almonds, chopped
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 4 tablespoons fresh Parmesan cheese grated
- 2 6-ounce whitefish fillets
- Spray Oil
Cooking Directions
- Heat a large pan to medium heat.
- Spray with oil and add jalapeno peppers and almonds.
- Stir frequently about 5 minutes.
- Reduce heat to low and add whitefish.
- Top with garlic powder and chili powder and cover.
- Cook about 6-8 minutes or until fish is white and flaky. Reserve.
- Meanwhile, prepare noodles as directed by packaging - boil about 10 minutes for al dente.
- Drain noodles. Then add back to pot.
- Stir in Parmesan cheese and beaten eggs. Stir vigorously off the heat. Be sure not to cook the egg.
- Stir in jalapenos and almonds.
- Distribute to bowls. Top with cooked whitefish and serve.
