Mexicali Pasta with Roasted Jalapeno Peppers
A Mexican style pasta made with slow cooked tomato sauce and roasted jalapeno peppers.
Ingredients
- 1 pound ground turkey (or ground beef)
- 2 small onions, chopped
- 1 roasted red bell pepper, chopped
- 2 roasted jalapeno peppers, chopped
- 2 cloves garlic, chopped
- 2 tablespoons chili powder
- Salt to taste
- 16 ounce can of stewed tomatoes
- 8 ounces tomato sauce
- 2 tablespoons tomato paste
- 1 cup frozen corn
- 2 cups macaroni noodles
- 2 cups water
- 1 cup shredded cheddar cheese
- Chopped cilantro for garnish
Cooking Directions
- Heat a large pot to medium heat. Add onion with a splash of olive oil and cook about 5 minutes.
- Add roasted peppers and garlic. Stir and cook about 1 minute.
- Add ground turkey and break apart with a slotted spoon. Cook about 10 minutes, or until the turkey is cooked mostly through.
- Add chili powder and salt to taste.
- Add stewed tomatoes, tomato sauce, tomato paste and corn. Stir and heat through.
- Reduce heat and cook about 15 minutes to allow flavors to develop.
- Add noodles with 2 cups water and stir.
- Cover and cook about 10 minutes, or until noodles are done to your liking.
- Remove from heat and distribute to serving bowls. Top with cheddar cheese and cilantro. Serve!
