Mexicali Pasta with Roasted Jalapeno Peppers

A Mexican style pasta made with slow cooked tomato sauce and roasted jalapeno peppers.

Mexicali Pasta with Roasted Jalapeno Peppers

Ingredients

  • 1 pound ground turkey (or ground beef)
  • 2 small onions, chopped
  • 1 roasted red bell pepper, chopped
  • 2 roasted jalapeno peppers, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons chili powder
  • Salt to taste
  • 16 ounce can of stewed tomatoes
  • 8 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 1 cup frozen corn
  • 2 cups macaroni noodles
  • 2 cups water
  • 1 cup shredded cheddar cheese
  • Chopped cilantro for garnish

Cooking Directions

  1. Heat a large pot to medium heat. Add onion with a splash of olive oil and cook about 5 minutes.
  2. Add roasted peppers and garlic. Stir and cook about 1 minute.
  3. Add ground turkey and break apart with a slotted spoon. Cook about 10 minutes, or until the turkey is cooked mostly through.
  4. Add chili powder and salt to taste.
  5. Add stewed tomatoes, tomato sauce, tomato paste and corn. Stir and heat through.
  6. Reduce heat and cook about 15 minutes to allow flavors to develop.
  7. Add noodles with 2 cups water and stir.
  8. Cover and cook about 10 minutes, or until noodles are done to your liking.
  9. Remove from heat and distribute to serving bowls. Top with cheddar cheese and cilantro. Serve!
