Mexican Italian Fusion Lasagna
We had a dinner party the other night and wanted to come up with something a bit different that would easily feed 8 people. Lasagna is always a favorite. While you can easily toss in some peppers for a delightfully spicy kick, we decided to take it a few steps further by swapping in more traditional Mexican ingredients. The roasted poblano peppers add a welcomed garden flavor, and the jalapenos bring in the spice! Everyone liked it!

Mexican Italian Fusion Lasagna
Ingredients
- 12 lasagna noodles, cooked as directed
- 3 jalapeno peppers, roasted and sliced
- 2 poblano peppers, roasted and sliced
- 1 jar of your favorite pasta sauce
- 1 cup cheddar cheese, shredded
- 2 cups Mexican style cheese, shredded
- 1 pound ground beef, cooked
- 1 pound chorizo, cooked
- Chili powder to taste
Cooking Directions
- Preheat oven to 350 degrees
- Lightly oil an 8x10 baking dish and prepare to layer.
- Set one layer down of 4 lasagna noodles to cover.
- Add ground beef and chorizo. Even spread.
- Add sauce and spread evenly.
- Add another layer of 4 lasagna noodles and top with sliced jalapenos and poblano peppers. Top with Cheddar cheese.
- Add last layer of 4 lasagna noodles and top with shredded Mexican cheese.
- Sprinkle with chili powder to taste and bake 30 minutes.
- Serve!
