Mike's Big Taco Bowl (with Jalapeno Peppers)
We've made variations of this recipe my entire life. It has changed somewhat over the years and can serve as a "toss in what you like" type of recipe, but this is the basic foundation from which you can build. Feel free to toss in more vegetables, as many other chili peppers as you'd like. Vary up the cheeses and hot sauces as well.

Mike's Big Taco Bowl (with Jalapeno Peppers)
Ingredients
- 1 pound ground beef
- ½ bag tortilla chips (8 ounces)
- 1 cup shredded Mexican cheese blend (Monterey Jack, Cheddar, Queso quesadilla, Asadero)
- 2 teaspoons taco seasoning
- 1 tablespoon garlic, minced
- 3 roma tomatoes, chopped
- 2-3 jalapeno peppers, chopped – pickled peppers work fine for this recipe
- your favorite hot sauce to taste
Cooking Directions
- Thoroughly cook the ground beef in a large sauté pan
- Reduce heat to low and add garlic and taco seasoning along with ¼ cup water
- Simmer 10 minutes or longer for a fuller flavor
- In a large serving bowl add tortilla chips
- Pour taco meat over top of chips
- Mix well
- Add cheeses
- Top with tomatoes and jalapenos and hot sauce to taste
- Serve as a collective community bowl or separately for those that don’t wan to share
