Mike's Thai Pesto Sauce

We had fun creating this original recipe, so much fun that we might start playing with mashup recipes more! This mashup is a combination of our spicy jalapeno pesto sauce and a Thai flair. The result? Jalapeno Miss says we definitely have a winner. It's just spicy enough to give a nice little kick, yet with enough Thai to satisfy the Thai food lovers.

Mike's Thai Pesto Sauce


  • 3 small potatoes peeled and chopped
  • 10-12 fresh basil leaves, chopped
  • 30 raw peanuts, shelled
  • 1 jalapeno pepper, chopped
  • 4-5 tablespoons extra virgin olive oil
  • 1 teaspoon Thai spice
  • Black pepper to taste


  1. Heat a sauté pan to medium-high heat
  2. Add peanuts and potatoes with a little olive oil
  3. Sauté 10-12 minutes until peanuts are nicely roasted
  4. Transfer ½ of potato/peanut mixture to a food processor or blender
  5. Add basil, jalapeno, Thai spice, black pepper and olive oil
  6. Pulse until finely chopped or blended
  7. Return to sauté pan with remaining potato/peanut mixture
  8. Heat about 1 minute
  9. Serve with your favorite pasta dish.
