Mike's Thai Pesto Sauce
We had fun creating this original recipe, so much fun that we might start playing with mashup recipes more! This mashup is a combination of our spicy jalapeno pesto sauce and a Thai flair. The result? Jalapeno Miss says we definitely have a winner. It's just spicy enough to give a nice little kick, yet with enough Thai to satisfy the Thai food lovers.

Mike's Thai Pesto Sauce
Ingredients
- 3 small potatoes peeled and chopped
- 10-12 fresh basil leaves, chopped
- 30 raw peanuts, shelled
- 1 jalapeno pepper, chopped
- 4-5 tablespoons extra virgin olive oil
- 1 teaspoon Thai spice
- Black pepper to taste
Directions
- Heat a sauté pan to medium-high heat
- Add peanuts and potatoes with a little olive oil
- Sauté 10-12 minutes until peanuts are nicely roasted
- Transfer ½ of potato/peanut mixture to a food processor or blender
- Add basil, jalapeno, Thai spice, black pepper and olive oil
- Pulse until finely chopped or blended
- Return to sauté pan with remaining potato/peanut mixture
- Heat about 1 minute
- Serve with your favorite pasta dish.
