Sriracha-Pulled Pork Jalapeno Poppers Recipe

This is a classic Mexican soup recipe, more like a stew, made with seasoned chicken, hominy, broth, chili paste, fresh herbs and plenty of jalapeno peppers. You can make this with pork and other meats, though we opted for chicken this time. So gorgeous to behold! And to eat. YUM. This is a new favorite in the Madness household.

Sriracha-Pulled Pork Jalapeno Poppers Recipe

Ingredients

  • 10 jalapeno peppers (or more as needed)
  • 10 ounces prepared pulled pork
  • 3 tablespoons Sriracha sauce + more for topping
  • ½ cup shredded cheddar cheese

Cooking Directions

  1. Preheat oven to 350 degrees.
  2. Slice the jalapeno peppers in half and scoop out the insides. Set aside.
  3. Add the pulled pork to a mixing bowl. Stir in Sriracha. Mix well.
  4. Stuff each jalapeno half with the spicy pulled pork mixture.
  5. Top each with cheese and set onto a lightly oiled baking dish.
  6. Bake for 20 minutes.
  7. Remove from heat. Top with extra Sriracha, if desired, and serve!
