Red Curry Potato Mash with Jalapeno Peppers
Potatoes always make for an amazing side dish, but there are so many ways to vary them up. We can go on forever with the variations. This one calls for jalapeno peppers, of course, and introduces red curry paste into the mix. Bring some Asian flare to your potato mash.
Red Curry Potato Mash with Jalapeno Peppers
Ingredients
- 2 large yellow potatoes
- 1-2 jalapeno peppers, diced
- 1 teaspoon red curry paste
- 1 tablespoon butter
- Salt and pepper to taste
Cooking Directions
- Poke the potatoes with a knife in several places and microwave on the potato setting. The holes allow the steam to escape. Microwave about 8-10 minutes, or until nice and soft.
- Transfer potatoes to a bowl with remaining ingredients and mash thoroughly.
- Season with additional salt and pepper as desired.
- Serve!
