Salmon with Roasted Jalapeno-Yogurt Sauce
Looking for a low-calorie way to treat your seared salmon? Try this yogurt based sauce spiced up with roasted jalapeno peppers and flavored with roasted garlic and a bit of cilantro. It is super quick to whip together and adds a fresh flavor.

Ingredients
- 2 6-ounce salmon fillets
- 2 cloves roasted garlic
- 1 roasted jalapeno pepper
- 1 teaspoon fresh chopped cilantro
- 2 tablespoon unflavored Greek yogurt
- Salt and pepper to taste
- 1 teaspoon olive oil, or spray oil for a lighter touch
Cooking Directions:
- Preheat oven to 350 degrees.
- Heat an oven-ready sauté pan to medium heat and lightly oil.
- Season salmon fillets with salt and pepper to taste.
- Sear 1-2 minutes each side.
- Remove from heat and add to oven.
- Cook another 6-7 minutes or until salmon is cooked through to your liking.
- While salmon is cooking, to a food processor, add garlic, roasted jalapeno, cilantro and yogurt.
- Process until smooth. Salt and pepper to your liking.
- Remove salmon from oven, set onto plate and top with roasted jalapeno sauce.
- Serve.
