Spicy Shrimp Alfredo with Roasted Jalapeno Peppers
After recently discovering the beautiful awesomeness of the silky carbonara sauce, we decided to create an Alfredo-style version, and simply couldn't resist the addition of the profoundly flavorful roasted jalapeno pepper. Bring in the shrimp for one of the world's best pasta dishes.

Spicy Shrimp Alfredo with Roasted Jalapeno Peppers
Ingredients
- 2 jalapeno peppers, roasted and sliced
- 4 ounces pasta, prepared
- 2 eggs
- 1/4 cup heavy cream
- 1/4 cup Parmesan, freshly grated
- 1/2 pound shrimp, peeled and deveined
- 1 teaspoon minced garlic
- 2 teaspoons chili powder
- 2 teaspoon melted butter
- teaspoon olive oil
Cooking Directions
- In a mixing bowl, beat eggs until smooth.
- Add 1 teaspoon chili powder, heavy cream and Parmesan cheese. Mix well and set aside. This is your Alfredo sauce.
- Season shrimp with 1 teaspoon chili powder.
- Heat a large pan to medium heat. Add olive oil, garlic and shrimp. Saute about 4-5 minutes, or until shrimp are no longer pink and cooked through.
- Stir in prepared pasta and toss.
- Remove completely from heat and stir in your Alfredo sauce.
- Top with roasted jalapenos and serve!
