Spicy Soft Boiled Eggs with
Toast and Jalapeno Peppers
Soft boiled eggs are great if you like solid egg whites but a liquidy yolk. You can boil the eggs longer than 5 minutes to harden the yolks if you prefer it that way, but we love to sop up the yolk with our toast, then toss a jalapeno slice over the top for a full, flavor filled bite. Dieting purists might argue that egg whites only are better for a low calorie breakfast, but we believe you need a bit of fat in your diet to maintain a healthy balance, and eggs are perfectly natural. This meal pictured is only 200 calories. Want to reduce the calories even more? Only serve with 1 egg.
Ingredients
- 4 large eggs (80 calories each)
- 2 pieces of low calorie bread (35 calories each)
- 10 slices pickled jalapenos (10 calories total)
Cooking Directions
- In a small pot, bring water to a boil.
- Gently add eggs and boil exactly 5 minutes.
- Meanwhile, lightly toast the bread and distribute to two plates.
- Remove eggs and rinse with cold water.
- Peel and set two eggs over each piece of toast.
- Top with jalapeno slices and serve.
