Spicy Turkey Meatloaf

Jalapeno Miss' mother makes meatloaf with hardboiled eggs stashed in the middle, and what a delicious surprise it is! So tasty. We love that recipe, but we love to create spicy, jalapeno filled versions of just about every recipe we come across. This is the result! Top it with a bit of extra spicy mustard and you've got one heck of a meal.

Spicy Turkey Meatloaf

Ingredients

  • 20 ounces ground turkey
  • ¼ cup red onion, diced
  • 2 jalapeno peppers, diced
  • 2 hardboiled eggs
  • 1 teaspoon minced garlic
  • 1 teaspoon Cajun seasonings
  • 1 teaspoon Italian seasonings
  • ¼ cup bread crumbs
  • 8 ounces tomato sauce
  • 2 tablespoons spicy mustard
  • 1 teaspoon hot sauce of choice
  • 2 teaspoon olive oil

Cooking Directions

  • Preheat oven to 400 degrees.
  • Heat a medium frying pan to medium heat and add 1 teaspoon olive oil with jalapeno and onion. Saute about 5 minutes.
  • Add sautéed ingredients to a large mixing bowl and add all remaining ingredients, except for the hardboiled eggs. Mix well.
  • Lightly oil an 8x10 baking dish. Add meat mixture.
  • Add hardboiled eggs and mold the meat over and around the eggs, forming a loaf. The eggs should be completely embedded into the loaf.
  • Bake 30 minutes.
  • Top loaf with extra spicy mustard and serve!

NOTES: You can serve this with LOADS of topping choices.
