Don't let the terminology fool you. A stuffed jalapeno is basically the same thing as a jalapeno popper. A purist might tell you that the true difference lies in the fact that a stuffed jalapeno is different from a jalapeno popper because jalapeno poppers are breaded, but this is all semantics. Stuffed jalapenos and jalapeno poppers are one and the same. Should you choose to bread your stuffed jalapenos or wrap them in bacon and grill them, they're still the same thing.
One of the best things about stuffed jalapenos is that you can stuff them with just about anything and they'll be delicious. Within reason, of course. You don't have to limit yourself to cream cheese (which is absolutely delectable). Let your creative mind wander. That's exactly what we did when devising our recipes for the Jalapeno Poppers cookbook. You are only limited by your imagination.
